Eat fit is the best cloud kitchen to order from if you are looking for healthy food. They serve different cuisines and each one of them is not only healthy but super tasty! Recently I ordered Dal Makhni Combo from them and it tasted just like home. Rice were not at all starchy and lentils were mildly spiced.
The best part about it is that there delivery comes with a small complimentary pack of super foods which usually has jaggery coated peanuts and flaxseeds in it. This super food not only rates your metabolism but also replaces your unhealthy dessert.

Dish Name – Vegetable Cutlet

Bikaner Namkeen Bhandar is a sweet and snacks shop in Kailash Colony Market. They serve a variety of snacks and sweets which I really miss as this shop is near my office and I am unable to go there because of lockdown.
This vegetable cutlet is made up of mashed spicy vegetables like beetroot, potato, peas and cauliflower. The veggie mix is dipped in thin chickpea flour batter and rolled in nylon sev. It is then deep fried. It is accompanied with sweet chutney.

Palak Masala Dosa by Juggernaut, Kailash Colony

Palak masala dosa is made by applying spinach paste on dosa while it’s being cooked. Palak puree give a nice green color to dosa and makes it healthier by adding the nutrition of spinach leaves.
It is served with sambar and various chutneys. Prior to serving the main dish, they serve you with a portion of Rasam and Papad which is an authentic south indian delicacy.

  • For Falafel :
  • Chickpeas – 1 cup
  • Water – 4 cups to soak chickpeas
  • Onions – 1/4 cup
  • Scallions – 2 tablespoon
  • Garlic – 2 cloves
  • Cumin seeds – 1 teaspoon
  • Corinader leaves – 1 teaspoon
  • Salt to taste
  • Oil for frying
  • For Hummus :
  • Boiled chickpeas – 1/2 cup
  • Tahini – 2 tablespoon
  • Olive oil – 2 tablespoon
  • Garlic – 2 cloves
  • Salt to taste
  • A pinch of paprika powder
  • For Pickled Vegetables :
  • Assorted vegetables – 1/2 cup
  • Vinegar – 1/2 cup
  • Salt to taste
  • Water – 1 cup

Instructions
 

  • Falafel :
  • Soak chickpeas in water overnight and grind them coarsely.
  • Add all the ingredients in a bowl except oil and mix well until combined.
  • Form small balls with the mixture and flatten them.
  • Deep fry in hot oil on medium flame until the Falafels turn crisp.
  • Hummus :
  • Mash the boiled chickpeas to form a smooth paste.
  • Add garlic, tahini paste, olive oil and salt and mix well.
  • Top with paprika powder.
  • Pickled vegetables :
  • Boil water and add vinegar to it.
  • Add all the vegetables and salt to it.
  • Blanch the vegetables for 1 minute and strain the liquid.

Notes

This recipe taste the best with warm pita bread but you may serve it with a portion of house fries as well.

Falafel are the best snack for your house party, which can be prepared easily in large batches. Read the recipe below. To make prepare this recipe, chickpeas are soaked, then ground up, and seasoned with onions, scallions and spices like parsley, garlic, cumin and coriander. Then, the mixture is shaped into balls and deep-fried in a large vat. The oil has to be hot enough so that when you drop the balls in, the outside gets nice and crispy and the inside doesn’t get too oily – a delicate balance that the best chefs have achieved.

Chilli Cheese Toast

Dish Name – Veg chilli Cheese Toast
Ingredients

Wheat bread: 4 slices, toasted

Capsicum: 1/4 cup, chopped

Processed cheese: 1/2 cup, grated

Mozzarella cheese: 1/4 cup, grated

Butter: 2 tbsp

Green Chilli: 1 tsp, chopped

Olive oil:1 tbsp

Black pepper: 1 tsp

Garlic: 1 tsp, finely chopped

Chilli flakes: 1 tsp, optional

Salt: to taste

Instructions

Toast the bread slightly to make it crispier.

Chop the capsicum into diced.

Pre-heat the oven for about at 150 degree C for 5 minutes.

In a bowl take grated processed cheese, mozzarella cheese, capsicum, green Chilli chopped, black pepper and salt to taste. Mix all the ingredients well.

Add a tablespoon of olive oil and mix well all ingredients to make cheese mixture.

Take the toasted wheat bread and apply butter on top.

Now evenly spread the cheese mixture on top of the bread.

Also sprinkle some Chilli flakes.

Place all the bread in baking tray and bake for about 5 minutes at 180 degree C.

Enjoy the Chilli cheese toast with ketchup.

Chowmein with Aloo Tikkis

Ingredients

  • Instant Noodles – 200 gm
  • Assorted vegetables – 1 cup
  • Soy sauce – 1 tablespoon
  • Green Chilli Sauce – 1 tablespoon
  • Schezuan Sauce – 1 tablespoon
  • Oil for cooking
  • Salt to taste
  • Frozen / Home made Aloo Tikki – 2 nos.

Recipe-

  1. Boil 2 cakes of instant noodles.
  2. Stir-fry your choice of veggies.
  3. Season with salt and pepper.
  4. Add sauces like soy sauce, chilli sauce and schezuan sauce.
  5. Add the boiled noodles and mix well.
  6. Top it with some fried Mc Aloo Tikkis!

Appetizers

Palak ki Shami

Recipe –

  1. Heat 2-3 tbsp of oil in a non-stick pan. Add ginger, garlic, green chillies and sauté.
  2. Add spinach and sauté. Then add roasted Bengal gram powder and sauté lightly. Mix well and transfer this mixture into a bowl.
  3. Add garam masala powder, nutmeg powder, lemon juice and salt to the mixture and mix well.
  4. Heat remaining oil in a non-stick pan. Divide spinach mixture into equal portions and shape them into kebabs.
  5. Place the kebabs in the pan and shallow fry, turning sides, till golden and crisp on both the sides. Drain on an absorbent paper and sprinkle some chaat masala.
  6. Transfer onto a serving plate and serve hot.

Vegetable Pulao

Recipe –

  1. Add 2 tablespoon oil in a pressure cooker.
  2. Add whole spices like star anise, bay leaf and cumin seeds.
  3. Add 1 teaspoon asafoetida and 1 tablespoon red chilli powder.
  4. Add assorted veggies and 2 cups of soaked rice.
  5. Add salt to taste. Mix well and cook upto 2 whistles.

Chilli Cheese Pav

Recipe –

Ingredients

6 ladi pavs

To Be Mixed Into A Stuffing
1/2 cup grated processed cheese
1/4 cup finely chopped cabbage
1/2 cup finely chopped capsicum (red , yellow , green)
1/4 cup finely chopped onions
1 tsp finely chopped green chillies
1 1/2 tbsp schezuan sauce
1/2 tsp chilli sauce
1 1/2 tbsp tomato ketchup
salt to taste

To Be Mixed Into A Spread
1/4 cup melted butter
2 tsp finely chopped garlic (lehsun)
1/4 cup finely chopped spring onions greens

Method

Place 6 ladi pavs on a clean, dry surface and using a sharp knife make horizontal and vertical slits.

Put the stuffing into each slit.

Place it on a aluminium foil, brush the prepared spread evenly over it.

Cover the stuffed ladi pav with the foil till it is sealed very well.

Bake in a pre-heated oven at 200ºc (400ºf) for 15 minutes.

Open the aluminium foil and serve immediately.
